Natural Rind Cheddar 
A traditional, milled curd cheddar, in 2009, Flat Creek Lodge’s Natural Rind Cheddar earned a Silver Medal in the Farmstead Hard Cheese category at the first North American Regional Jersey Cheese Awards.

“Even though this competition is new, there were a lot of impressive specialty products entered,” said Flat Creek Lodge Head Cheesemaker Dane Huebner. “It’s great when you can place in the top three, so we are very excited about taking second place overall.”

With only 20% of the milk produced in the United States coming from Jersey cows, just being able to enter the contest aligns Flat Creek Lodge in a very small select portion of artisanal cheese makers. The North American Regional Jersey Cheese Awards were open to cheeses and butters made in Canada and the United States from 100% Jersey milk. The regional contest drew 77 entries from 29 producers in 15 states and Quebec.

Perhaps it’s the quiet setting of the Flat Creek Lodge Dairy that makes Duane Huebner such a creative artisan. Located on the outskirts of Swainsboro, Flat Creek opened to the public eight years ago as a hotel and hunting lodge, but Huebner’s cheese making skills have brought the business its biggest rush of fame. After well-established Sweet Grass Dairy in Thomasville, Flat Creek is only the second artisan producer in Georgia to sell its cheeses regionally.
