Barrel-aged in white oak, this is the most popular vinegar produced by the artisans of O Olive Oil in San Rafael. O Champagne Vinegar sparkles with the crisp, light and dry accents celebrated in regional California champagnes. Timeless aging and evaporation removes the bubbles and enhances the brilliant complex flavors. It is pale gold in color, yet clear and bright. Use O Champagne Vinegar to make a classic vinaigrette with Dijon mustard, garlic, Extra Virgin Olive Oil, fresh ground pepper & kosher salt. Or, simply blend it with Meyer Lemon Olive Oil, add kosher salt, then toss the mix with hearts of romaine, shaved Parmesean and avocado. O Champagne Vinegar can be combined with tarragon, extra virgin olive oil, fresh ground pepper & kosher salt to make a tasty marinade for chicken, pork or vegetables.
