Midnight Moon

Aged one year or more, this pale, ivory goat cheese is firm, dense and smooth with the slight graininess of a long-aged cheese. The flavor is nutty and brown-buttery, with prominent caramel notes. The wheel is finished in a beautiful black wax. Midnight Moon has gained recognition as one of America’s great aged goat cheeses. In 2002, it was named Best New Product in Show by the IFFCS in New York. In 2003, it was a named a Finalist-Best Cheese by the IFFCS. When uncut this cheese has a shelf life of 8 months. To maintain Midnight Moon in its original condition after cutting keep it wrapped tightly in plastic wrap to prevent drying. Keep it cold at 35 degrees F. When you are ready to serve, remove only the portion you plan to serve and bring to room temperature. Midnight Moon is a wonderful accompaniment on a platter of cured meats and fresh fruit slices. Serve slices of Midnight Moon with preserved figs and you can skip the crackers! It can also be used to make a really special grilled cheese sandwich. A Standard order is an 8 to 9-pound wheel.
