Humboldt Fog 

Internationally acclaimed Humboldt Fog is an elegant, soft, surface ripened goat cheese.   The texture is creamy and luscious with a subtle tangy flavor.   Each handcrafted wheel features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior to give it a distinctive, cake-like appearance.   An American Original!

 

Humboldt Fog is recognized the world over as one of the great soft ripened cheeses.   It was a awarded a Gold Medal at the prestigious London International Cheese Competition in 2004.   It took First Place from the American Cheese Society in 1998, 2002 & 2005.   In 2002, it was selected as the Best Cheese & Dairy Product by IFFCS in New York.

 

To maintain Humboldt Fog in its original condition wrap it in wax paper.   Never use plastic wrap; ripened cheese needs t breathe.   Keep it cold at 35 degrees F.   When you are ready to serve, remove only the portion you plan to serve and bring to room temperature.   To speed ripening keep it in a warmer part of the refrigerator.   If left uncut it has a shelf life of 4 weeks.   

 

Humboldt Fog pairs nicely with a crisp white wine.   It goes wonderfully with wild mushrooms and other earthy flavors.   Try placing a slice a top a salad of fresh spinach, American Black Walnuts, and drizzle with raspberry dressing.   For a simple yet elegant dessert serve it with honeycomb and sliced pears.

 

A Standard order includes a case of 4 wheels.   Each wheel is 16 ounces for a total of 64 ounces of cheese.
