Maine apples are a very good source of vitamin C & a good source of the B vitamin 'biotin'. They are also a good source of a variety of minerals-magnesium, iron, chromium, and manganese. Apples (as distinct from the expressed juice) are a good source of soluble fiber, which has been shown to slow the release of sugars in the blood and also slightly drop blood cholesterol levels. Apples are a fairly good source of 'polyphenols'; the substances in plants believed to reduce cancer risk. Tests of apple extract have been shown to inhibit various cancer cell lines in laboratory tests. Whether there is a significant effect in humans has not been shown, but it is at least suggestive.
