This is the traditional Alaskan method of smoking, where salmon is given a heavy smoke at a relatively high temperature. The result is a firm-meat product that easily flakes off. This form is most familiar to people in the Pacific Northwest. Finally, each fillet is inspected before it is sealed in a gold foil pouch to lock in the Salmon's freshness and rich flavor.
